The Hound was supposed to die at the crossroads, but they are keeping him on for a bit, but he will be killed soon.
Also the scene with the White Walkers with the baby a couple of episodes ago still happens technically in that world, but the books do not highlight the process of the birthing of White Walkers. Apparently Winds of Winter will have that.

it'll still end the same most likely, Martin told the creators of the show the ending of the books so if anything happens to him, they can still end it how he intended. I'm pretty sure Martin supports the decisions the creators of the show make, he's been involved in some of the filming and written episodes
